Miss Hulling's: Banana Walnut Layer

Early on, a bakery became a part of the Miss Hulling’s cafeterias out of necessity. So many customers asked to take home a slice of the cake or pie they had just enjoyed that Hulling's installed a carry-out service. The biggest seller was their split-layer cakes, lemon and chocolate.

Banana Walnut Layer

Yield: 1 cake


Ingredients

  • 1 cup butter

  • 3 cups sugar

  • 2 tsp soda

  • 2 cups mashed ripe bananas

  • 2 eggs

  • 2 egg yolks

  • 4 cups sifted cake flour

  • 2 tsp baking powder

  • 1 tsp salt

  • 1 1/2 cups buttermilk

  • 2 tsp vanilla

  • 1 cup walnut or pecan pieces (chopped coarse)


Preparation

Cream butter, sugar and soda until light and fluffy.

Add the bananas, then the eggs and yolks and continue beating until well mixed.

Stir flour and baking powder and salt and add alternately with buttermilk and vanilla.

Add nuts with last of flour mixture.

Pour into 3 greased and floured 9-inch cake pans and bake at 375 degrees for 25 minutes or until done.

Invert pans on a wire rack to cool.

If entire cake is to be eaten soon, just before serving, ice with sweetened whipped cream and slice bananas between the layers.

Bananas will darken if standing for a long time.
