Dohack's: Hillbilly Bran Muffins

In 1923, the original Dohack's restaurant was built as a small frame structure at the intersection of Lemay Ferry Road and Lindbergh. In 1999, Dick Dohack shared the restaurant's recipe for hillbilly bran muffins.

"We have used this recipe in our restaurant for many years and have pleased many guests with it," said Dohack. "You will find it to be a very easy and practical recipe. The finished muffins freeze very well and make a terrific microwavable treat with your morning coffee."

Hillbilly Bran Muffins

Yield: 20 muffins


Ingredients

  • Nonstick cooking spray

  • 3 1/2 cups Post raisin bran cereal (half of a 15-oz box)

  • 1 1/2 cups granulated sugar

  • 2 1/2 cups all-purpose flour

  • 2 1/2 tsp salt

  • 2 1/2 tsp baking soda

  • 2 eggs, beaten

  • 1/2 cup melted shortening or oil

  • 2 cups buttermilk


Preparation

Preheat oven to 400 degrees. Coat the cups of a muffin tin with nonstick cooking spray or fill each cup with a paper cupcake liner.

In a large mixing bowl, combine raisin bran, sugar, flour and salt.

Sift baking soda; stir into other dry ingredients.

Add eggs, melted shortening and buttermilk. Stir until dry ingredients are incorporated.

Spoon batter into muffin cups, filling each cup two-thirds full.

Bake for 18 to 20 minutes, until muffins are lightly browned and a wooden pick inserted into center of a muffin comes out clean.
