Chaney's: Baked Beans

Chaney's barbecue was served with a choice of two basic American side dishes: coleslaw, baked beans, potato salad, corn-on-the-cob, french fries, spaghetti or applesauce. One of the most popular side dishes was these easy-to-fix baked beans.

Baked Beans

Yield: 6 servings


Ingredients

  • 2 (16-oz) cans pork and beans

  • 1/4 green bell pepper, finely diced

  • 1 small onion, chopped

  • 1/2 cup loosely packed brown sugar

  • 2 strips bacon, fried crisp and diced

  • 3 Tbsp yellow mustard

  • 4 Tbsp ketchup


Preparation

Mix all ingredients together and place in a baking dish. Bake at 350 degrees for 30 minutes.
