Ingredients

  • 8 oz bow tie pasta cooked al dente

  • 3 Tbsp olive oil

  • 1 Tbsp butter

  • 1 cup chopped mushrooms

  • 1 cup diced red onions

  • 1 cup diced tomatoes

  • 1 tsp minced garlic

  • 2 oz chopped baby spinach

  • Salt and pepper to taste

  • Grated parmesan to garnish

  • Chopped parsley to garnish


Preparation

In a skillet, melt butter in oil over medium high heat. Add mushrooms and onions and saute for 3 to 4 minutes. Next, add tomatoes and garlic and saute for 2 more minutes. Now add the chopped spinach and saute for 1 or 2 minutes until spinach begins to release a little liquid. Add hot pasta and toss through to evenly distribute all ingredients. Add salt and pepper and serve in a pasta bowl. Garnish with grated parmesan and parsley. Serve immediately
