Caleco's served four house-made
salad dressings: creamy Italian, warm bacon, vinaigrette and Caesar.
According to one of the owners, "At some point, we added a little curry
to the Caesar. It's been that way ever since."

Yield:
1 3/4 cups
Ingredients
1/2 cup plus 3 Tbsp vegetable
oil
2 1/2 Tbsp red wine vinegar
10 small anchovies (3/4 oz)
1/6 large white onion (1 oz),
roughly chopped
2 ribs celery, roughly chopped
4 tsp mayonnaise
1 3/4 tsp prepared mustard
1/4 cup pasteurized liquid eggs
(such as Quick Eggs)
1 tsp garlic powder
2/3 tsp MSG (such as Ac'cent)
1/2 tsp curry powder
1/2 tsp ground black pepper
1/3 tsp salt
1/3 tsp paprika
1 small pinch xanthum gum,
optional
Preparation
Combine all ingredients to a
blender; process for 2 to 3 minutes, until dressing is smooth and
creamy.
