Chef Ny Vongsaly's chilled sesame noodles were served as an appetizer or, combined with a protein, as an entree at Zoe Robinson's Bobo Noodle House.

Chilled Sesame Noodles

Yield: 6 servings


Ingredients

  • 2 Tbsp mushroom soy sauce

  • 1/4 cup Kikkoman soy sauce

  • 1/4 cup sesame oil

  • 1 Tbsp sambal chili sauce

  • 1 tsp garlic minced

  • 3 Tbsp sesame seeds

  • 2 Tbsp fresh cilantro, chopped

  • 1 lb capellini

  • Peanuts, crushed

  • Fresh cilantro, chopped


Preparation

Whisk soy sauces, sesame oil, chili sauce, garlic, sesame seeds and 2 tablespoons cilantro together in a large mixing bowl.

Cook capellini for 5 to 6 minutes in boiling water. Do not overcook.

Strain noodles. Immediately add to sauce and toss.

Serve noodles chilled with garnish of crushed peanuts and chopped cilantro.
