Golden Fried Chicken Loaf Mina Evans, who owned Golden Fried Chicken Loaf, wrote out recipe cards for the items served at her restaurant, as well as handwritten instructions for how to fry chicken. Some have survived, and were passed on to her daughter, Mina Overton, and then to her granddaughter, Mina Nashan.
