Soulard's: Pimento Cheese

Soulard's house made pimento cheese was an old family recipe. The creamy cheese was served with crackers as an appetizer.

Pimento Cheese

Yield: 12 servings


Ingredients

  • 1 1/2 lb Velveeta Cheese, cut into chunks

  • 2 oz chopped pimentos

  • 1 egg, beaten

  • 1/3 cup sugar

  • 1/4 cup red wine vinegar

  • Pinch of salt

  • 1/4 stick margarine


Preparation

Combine egg, sugar, vinegar and salt. Put in a saucepan and cook over medium heat, stirring constantly. When mixture comes to a boil, add margarine, then add cheese and stir until melted. Last add pimentos. Cool, pour into containers and refrigerate until ready to use.

Spread on crackers or toasted French bread.
