Saleem's: Hummus

The extra lemon in Saleem's hummus makes it almost addictive. The background of tahini adds nuttiness to the rich warm flavor, with a texture that's easy to spread on pita or crackers.

Ingredients

  • 2 cloves garlic

  • 1 Tbsp salt

  • 1 (12-oz) can chickpeas, drained

  • 5 oz tahini (sesame seed paste, available in health food stores)

  • Juice of 3 lemons

  • Radishes and black olives for garnish

  • Pita bread or crackers


Preparation

Mash garlic with salt until mashed fine. Add the chickpeas. Transfer mixture to container of electric blender; blend until well mixed. Stir in tahini and lemon juice; mix well.

Garnish hummus with radishes and black olives, if desired. Serve pieces of pita bread or crackers with the dip.
