Ruggeri's: Erminia Salad

Henry Ruggeri and his wife Erminia lived above their restaurant at 2300 Edwards on the Hill. Henry (the Chief) ran the floor and Erminia (Mama Minnie) did the kitchen. Erminia's wedge salad with baby shrimp was a fixture on the Ruggeri's menu.

Yield: 1 generous serving


Ingredients

  • 1/2 head iceberg lettuce, quartered

  • 1 hard boiled egg, sliced

  • 3 anchovy fillets, chopped

  • 1 handful baby shrimp

  • 1 tsp imported Italian olive oil

  • 1 tsp red wine vinegar

  • Thousand Island salad dressing

  • Roquefort salad dressing


Preparation

Wash & quarter iceberg lettuce. Add sliced eggs, shrimp, anchovies, oil & vinegar. Cover with equal parts of Thousand Island and Roquefort dressing. Mix and serve chilled.
