Redel's: Salmon Cakes

Redel's salmon cakes were a favorite appetizer. They were served with a delicious, piquant Cajun-style tartar sauce.

Salmon Cakes

Yield: 3-4 servings


Ingredients

  • 2 lb salmon meat

  • 2 cups breadcrumbs

  • 6 eggs

  • 1/3 cup mayonnaise

  • 2 medium onions, ground

  • 2 medium green peppers, ground

  • 1/2 tsp thyme

  • 1/2 tsp basil

  • 1 Tbsp Old Bay seasoning

  • Lemon juice


Preparation

Poach salmon in water, lemon juice and salt until firm. Remove from heat, de-bone and cool. Mix remaining ingredients with salmon in large bowl. Portion mixture into 3 ounce patties. Roll patties in breadcrumbs. Patties may be baked, deep fried or sautéed. (Recommend sauté.)
