Richard Perry: Pear Butter

Richard Perry built his reputation on superlative preparations of quintessential Midwestern food. His dinners began with excellent house-made breads. Both the cracked wheat and and white were very good, particularly with Perry's delicious pear butter.

Ingredients

  • 2 qt pear pulp

  • 4 cups sugar

  • 1 tsp grated orange rind

  • 1/3 cup fresh orange juice

  • 1/2 tsp ground nutmeg


Preparation

Prepare pulp by quartering and coring pears. Cook until soft, adding enough water to prevent sticking. Put through a food mill.

Add remaining ingredients. Simmer until thickened, about 15 minutes.
