Early on, Parkmoor management provided employees with a recipe manual to ensure uniformity at their restaurants. Many of these recipes were rather basic, but they documented the exact ingredients and the proper way to assemble any item served at the restaurants.

Breaded Pork Filet Sandwich

Yield: 1 sandwich


Ingredients

  • 1 buttered bun

  • 2 oz pork loin (breaded)

  • 1 slice tomato (3/4 oz)

  • 1 leaf (head) lettuce (3/4 oz)

  • 1 tsp mayonnaise (1/2 oz)


Preparation

Place buttered bun on toaster. Place breaded pork loin in fryer. Cook at 360 degrees for 3 minutes.

Place meat on bottom half of toasted bun. Place on top of meat one leaf lettuce, one slice of tomato and one teaspoon of mayonnaise. Add top half of bun.

Cut in half and use a toothpick for each half of sandwich. Serve on 7 inch brown plate in dining room. For outside service do not cut. During winter months wrap in foil. During summer months serve in sandwich bag.
