The Parkmoor: Chickburger

The Parkmoor Chickburger was developed by founder William McGinley in the 1930s, and went on to achieve a cult following. The tasty warm chicken salad sandwich with a kick was served to customers for 50 years, disappearing in the 1980s when sales did not justify keeping it on the menu.

Yield: 5 or 6 servings


Ingredients

  • 1 lb broiled or baked chicken or turkey, boned

  • 2 Tbsp barbecue spice, or to taste

  • 5 Tbsp granulated sugar

  • 1 Tbsp celery salt

  • 3/4 tsp ground black pepper

  • 10-12 oz chicken broth


Preparation

Preheat oven to 350 degrees.

Finely chop chicken or turkey.

Mix barbecue spice, sugar, celery salt and black pepper together.

Toss chicken with barbecue spice mixture in a 9-inch x 13-inch pan.

Cover mixture with chicken broth. Bake uncovered for 35 to 40 minutes or until a curst forms on top. Mixture should be moist when it's removed from the oven. If it's too dry, add a little more chicken broth.

Serve on a toasted bun with tartar sauce, lettuce and tomato.

Note: The barbecue spice originally used by The Parkmoor is no longer manufactured. Similar types of spices are available.
