Mayfair-Lennox: Prosperity Sandwich

The Prosperity was a popular item on the menu at the Mayfair Hotel in downtown St. Louis in 1925. There is nothing exotic or complicated about the sandwich. Over the decades there have been numerous variations. This is purported to be the original.

Ingredients

  • 3 slices toast

  • 3 slices white turkey breast

  • 3 slices smoked ham

  • 2 Tbsp butter

  • 2 Tbsp flour

  • 1 cup milk

  • 1/8 tsp paprika

  • 1/2 tsp Worcestershire sauce

  • 2 Tbsp grated Swiss cheese

  • 2 Tbsp grated Parmesan cheese


Preparation

Top each slice of toast with a slice of turkey and ham. Cut in half diagonally.

To make sauce, in a small pan melt butter, add flour and combine until smooth. Then slowly add milk and cook on low heat until it thickens. Add rest of ingredients and combine.

Arrange three sandwich halves on two ovenproof plates or put all on a cookie sheet. Pour sauce over sandwiches. Heat under broiler until just heated through.
