Lotus Room: Fried Rice

Howard Wong and his family operated the Lotus Room at 1143 South Brentwood for over 30 years. Their fried rice contained no peas or carrots. Dark soy sauce gave it a rich brown color.

Yield: 4-6 servings


Ingredients

  • 1 tsp hot water

  • 1 tsp honey

  • 1 tsp sesame oil

  • 1 Tbsp soy sauce

  • 1 Tbsp dark soy sauce

  • 1/4 tsp pepper

  • 5 cups cold cooked jasmine rice

  • 1 medium onion, diced

  • 1/2 cup bean sprouts

  • 1 egg, scrambled

  • 2 scallions, chopped

  • 1 tsp oil (sesame, peanut or vegetable)

  • 1/2 tsp salt, or to taste

  • 1/2 cup cooked chicken, pork or beef, chopped (optional)


Preparation

In small bowl, mix hot water, honey, sesame oil, soy sauce and pepper. Set aside.

Fluff cooked rice to get out lumps.

In wok or large pan, sauté onion in oil over medium heat until translucent. Add rice, mixing well. Add sauce mixture and salt, coating evenly. Toss in bean sprouts, scrambled egg and scallions, mixing for 2 minutes, until heated through. Mix in meat of choice. Serve.
