Bernard's: Pollo Club Sandwich

Bernard's Pollo Club sandwich was a popular item on the bistro menu. In addition to grilled chicken breast, it was served with two kinds of bacon, Canadian and Coppa.

Ingredients

  • 1 (4-oz) chicken breast half, skinned and boned

  • 2 thin slices smoked Canadian bacon

  • 2 thin slices Coppa bacon

  • 1 large croissant, warmed and split in half

  • Mayonnaise, to taste

  • 3 to 4 slices tomato

  • 2 slices Mozzarella cheese

  • Lettuce slices

  • Salt and pepper, to taste


Preparation

Grill chicken over very hot heat for 3 to 5 minutes on each side, or until done. Remove from heat. Grill Canadian and Coppa bacon for 30 seconds on each side. Remove from heat.

Lightly spread croissant with mayonnaise. Arrange chicken, tomato, bacon, cheese and lettuce on croissant. Season with salt and pepper, if desired.
